Recipe: Lemon Artichoke Hearts

Published on Friday December 3th, 2021

For 8 people
Preparation time: 40 minutes
Level of difficulty: easy

Ingredients

Olive oil
3 garlic cloves, crushed and chopped finely
Turmeric
Sweet paprika
(1 bag) frozen artichoke hearts – already checked for insects
Zest of 1/2 lemon
Juice of 1 lemon
2 bay leaves
1 teaspoon honey
(Optional: Harissa)

Preparation

Here is a recipe that will add color to your table in honor of Shabbat kodesh!
In a frying pan, gently heat 2 tablespoons olive oil. Add the garlic and fry for 2 minutes. Then, add 1 tablespoon of sweet paprika and 1 tablespoon of turmeric. Let the heat bring out the flavors before adding the lemon zest and the artichokes cut into quarters. Stir well to coat the artichokes and fry 3-4 minutes, then add the lemon juice and 5 tablespoons water. Season, cover and cook for 15 minutes before removing the lid to let excess fluids evaporate. Once the salad is cooked through, remove from heat, add the honey, 2 tablespoons of olive oil, and for a little kick, a teaspoon of Harissa.
